Fall to me means good hearty meals. The kind of meals that warm you up and leave tasty leftovers. Growing up as soon as the weather started to change that meant stew time! My mother would regularly whip out the crock-pot on a Sunday evening and prepare an easy fulfilling beef stew. So earlier last week as the weather started to cool down my taste buds instantly yearned for her beef stew. Well seeing as how I don't live at home any longer, I had to prepare the meal myself. Of course, I called her several times while prepping everything but I did incorporate my own twist to the recipe.
Ingredients
2 pounds beef stew meat 1 medium onion, finely chopped 4 celery ribs, sliced 1 tablespoon minced garlic 1 lb baby carrots, sliced 1lb small red potatoes,cut into bite-sized pieces
1 can unsweetened corn 1 tablespoon Adobo 1 tablespoon Italian seasoning 1 tablespoon Cajun seasoning 1 tablespoon Garlic pepper seasoning
1 tablespoon Steakhouse seasoning 1/4 cup flour 1/4 cup water
1/8 cup vegetable oil
That may seem like a lot of ingredients but if you plan on making the meal I am sure you have most of this stuff in your kitchen.
Directions
Heat up vegetable oil in medium skillet on stove, once hot, but not too hot place the beef pot roast meat in skillet. The key is to just brown the meat. You do not need to cook all the way through. Brown each side for about 3 - 5 minutes.
2. Once the meat has browned turn the heat off and remove it from skillet. Now, begin to prepare the broth for the crock-pot. You can buy pre-made broth at the store, but I don't like how it taste so I made my own, well my version of it. I put the water 1/4 cup of water in the crock-pot and added all the seasonings listed above while letting the crock-pot heats-up a bit. I placed the crock-pot on low setting for temperature.
3. Let the broth mixture heat for about 10 minutes, then add the meat. I added a bit more seasoning to the meat because I am about all the flavor! Now, begin to chop your vegetables! Cut them in even pieces so they cook evenly. (Don't almost slice your finger like I did!)
4. Add all your vegetables to the crock-pot and cover. This is going to take awhile so go about your day while this goodness cooks itself, oh the joys of a crock-pot! I was antsy, so I continued to check on it and stir occasionally during the process.
5. Let cook for about 8-10 hours. However, an hour before it is complete I added the can of corn. In addition, I added flour to thicken the stew up. At the very end use a fork to shred up the meat to spread it evenly among the stew.
There ya have it! The finished product is sure to please anyone. It turned out very delicious and certainly soothed my soul. Plus, I have leftovers to last me days! This go-to comfort meal is easy and I recommend you try it out!
Side-note - Most of the steps involve prepping which can be done in advance of cooking the meat but this was just the way I did it.
